I think summer finally has come. It’s been open sky and sunny for almost two weeks now, even though the wind is still cold. Its been raining forever, the summer sure is late this year! But thank GOD it’s finally here! Even though it has been warm for a few days or more, you start to dehydrate and long for something cold. So, my mother, for this Sunday, made a Russian cold soup “OkroSHka (Окрошка).” It is my favorite cold soup, because it’s full of veggies and made of healthy products. It also brings back a lot of precious memories; for me this soup is a taste of childhood. I remember my mom use to make this soup every summer after those hot, dry, summer days. She would make it usually for dinner when everything is starting to cool down a little bit with a slow, orange sunset. She would make it fresh right out of our family garden and homemade buttermilk. So I would like to share my mom’s recipe, she makes it a little bit different based on the original. Actually it is a lot different than the original. Now she always base it on what kind of produce she has from fathers little garden, and the products that are available in the storage or fridge. The difference is that my mom makes in with buttermilk, when the original recipe made with kvass and sour cream. But first I will tell a little story behind where she learned of the recipe.
Actually my dad taught my mom this recipe when they were just married, back in Tajikistan. When my mom and dad got married, my mom moved to live with my dad’s family to Tajikistan. IT was their first meal they made together in the first day of marriage. They were married in summer, in the beginning of hot and dry August. They went shopping together for the first time. My dad took her to the wet market (the open market that they call there “bazaar”), showing her around and introducing her to what they got. He was telling her about the Tajiki traditional products and what they ate. He introduced her to “kin-za” herb and gave her to taste it, saying that it taste good, and that they use it and put it just about any food, especially into “okroshka” with buttermilk. This was the first time my mom tasted it, and she disliked the taste of the kin-za, “How can you eat it?!” she said. But my dad grew up eating it, so my mom noticed that he got offended a little bit. To make it up to him she decides to buy it anyway. He also showed her Tajiki buttermilk, it is made differently in Tajikistan; it is denser and thicker. Well they bought that too and also other products for supply. Back at home, they made this meal together, and since I can ever remember, she kept on doing this soup using this special recipe that she kept in her mind. For her it is a taste of summer romance. As for me, it is taste of childhood memories.
So, here you go, it’s fast and easy and light plus YUMMY! Well it does take a lot of time for preparation, so count on that, but it’s worth it! :)

Яйцо куриное (сваренное вкрутую) — 4 шт
Картофель (не переватить) — 4 шт
Огурец свежий (средний размер) — 2 шт
Редис (крупный) — 6-7 шт
Лук зеленый — 1 пуч.
Зелень укропа — 1 пуч.
Зелень петрушки — 1 пуч.
Зелень кинзы (Это на любителя) — 1 пуч.
Колбаса копченая или Колбаса (вареная) --200 г
Кефир1.5 L
Сметана 250 г
Соль (по вкусу)
Душистый перчик
ПРИГОТОВЛЕНИЕ:
1 Вкрутую сварить яйца, быстро остудите ее холодной водой, очистить скорлупу.
2 Сварить картофеля до тендера, снять с огня и дайте ей остыть. Почистить шкуры.
3 Мелко нарезать все остальные ингредиенты
4 Добавить пахты со сметаной
5 Добавить перец и соль по вкусу
6 Смешать все
7 Пусть стоит в течение 4-х до 10-и часов (или на ночь) в холодильнике
8 Подовать к столу
